  • 45 ml butter , softened
  • 1 lime(s) , zested and juiced
  • 60 ml rosemary (leaves only)
  • 2 clove(s) garlic , chopped
  • 2 ml onion powder
  • 10 ml mustard powder
  • To taste, salt and pepper
  • 1 whole chicken (1.4 kg/3 lb)
  • 1/2 beer in a can
  • 45 ml butter , softened
  • 1 lime(s) , zested and juiced
  • 60 ml rosemary (leaves only)
  • 2 clove(s) garlic , chopped
  • 2 ml onion powder
  • 10 ml mustard powder
  • To taste, salt and pepper
  • 1 whole chicken (1.4 kg/3 lb)
  • 1/2 beer in a can
prep time
  1. Mix the butter, lime juice and zest, rosemary, garlic, and spices together in a bowl. Season with salt and pepper.
  2. Take the chicken and gently separate the skin from the meat.
  3. Cover the meat under the skin with half the butter mixture. Melt remaining butter mixture and brush onto the skin.
  4. Preheat barbecue to medium-high. Wash the beer can. Sit the chicken onto the beer can and stand it in an aluminum pan. Turn off one side of the barbecue and place chicken on it to cook over indirect heat.
  5. Cook the chicken with barbecue lid closed for about 1 hour and 30 minutes, or until a meat thermometer inserted in the leg indicates 83°C (180°F). Serve the chicken with grilled veggies.
