  • 15 ml olive oil
  • 1 onion(s) , chopped
  • 2 clove(s) garlic , chopped
  • 2 green pepper(s) , diced
  • 2 stalk(s) celery , diced
  • 908 g beef , grounded
  • 45 ml chili powder
  • 5 ml cumin
  • 2,5 ml paprika
  • To taste, salt and pepper
  • 796 ml diced tomatoes
  • 540 ml corn kernels, drained or 250 ml frozen corn kernals
  • 540 ml red beans or black beans, drained and rinsed
  • To taste, sour cream
  • To taste, coriander , fresh, finely chopped
  • 1 lime(s) , cut in wedges

  1. Heat oil in a saucepan and sauté onion and garlic for about 5 minutes. Add peppers and celery and sauté about 2 minutes.
  2. Add beef and fry until browned. Add spices and salt and pepper and continue cooking for 2 minutes.
  3. Add tomatoes, corn, and beans and bring to a boil. Simmer on low about 30 minutes or until mixture thickens. Stir several times.
  4. Serve in a deep dish topped with a dollop of sour cream and fresh cilantro, served with a lime wedge and oven-crisped tortillas.
