  • 500 ml flour , all purpose
  • 7 ml baking powder
  • 7 ml baking soda
  • 1 ml salt
  • 100 g semi-sweet chocolate
  • 125 ml butter , unsalted and softened to room temperature
  • 500 ml sugar
  • 2 egg(s)
  • 125 ml milk
  • 250 ml greek yogurt (vanilla), at room temperature
  • 10 ml vanilla extract
  • Icing
  • 100 g semi-sweet chocolate
  • 30 ml butter , unsalted
  • 45 ml icing sugar
  • 30 ml milk
  • Topping
  • 2 containers of berries , of your choice
  • To taste, icing sugar (optional)

  • 500 ml flour , all purpose
  • 7 ml baking powder
  • 7 ml baking soda
  • 1 ml salt
  • 100 g semi-sweet chocolate
  • 125 ml butter , unsalted and softened to room temperature

  • 30 ml butter , unsalted
  • 45 ml icing sugar
  • 30 ml milk

  • 2 containers of berries , of your choice
  • To taste, icing sugar (optional)

Cake
  1. Preheat oven to 180°C (350°F).
  2. Combine flour, baking powder, baking soda, and salt in a bowl.
  3. Melt chocolate chips in a double boiler or microwave oven on low, stirring regularly. Chocolate shouldn’t be too hot. Set aside.
  4. In another bowl, beat butter, sugar, and eggs. Heat milk in microwave until just warm. Add milk, yogurt, and vanilla to sugar mixture and mix well to combine.
  5. Make sure chocolate isn’t too hot and sugar mixture isn’t too cold. If not, wait a bit or chocolate will harden. Add chocolate to mixture and mix well.
  6. Incorporate dry ingredients and mix to combine.
  7. Pour batter into a bundt pan and bake for 35 minutes. Check cake doneness with a toothpick. Let stand for 15 to 20 minutes before turning onto serving dish, then let cool completely.
Icing & topping
  1. Melt chocolate with icing ingredients in double boiler or microwave on low, mix until smooth, and pour over cake.
  2. Garnish centre of cake with berries. Sprinkle with icing sugar if you like and serve.

Chef’s secret

 

Don’t refrigerate cake as it will harden. Keep cake at room temperature in a cake dome.

 

Add icing and berries just before serving for the best presentation.
