  • 15 ml honey
  • 2 ml salt

  • 3 carrot(s) , peeled and cut in 2.5-cm (1-in.) chunks
  • 2 sweet potatoes (medium), peeled and cut in 2.5-cm (1-in.) chunks
  • 1 butternut squash (small), peeled, seeded, and cut in 2.5-cm (1-in.) chunks
  • 3 beet(s) , peeled and cut in 2.5-cm (1-in.) chunks
  • 3 yellow onions , peeled and cut in 2.5-cm (1-in.) chunks
  • 6 clove(s) garlic , peeled

  1. Preheat oven to 220°C (425°F).
  2. In large bowl, whisk together oil, thyme, vinegar, honey, salt, and pepper. Add carrots, sweet potatoes, squash, beets, onions, and garlic to bowl.
  3. Turn to coat vegetables with honey mixture. Spread vegetables on one or several baking sheet(s) in a single layer.
  4. Bake about 45 to 50 minutes until tender and lightly caramelized. Serve warm or at room temperature.
