  • 500 ml cauliflower florets
  • 30 ml olive oil
  • To taste, salt and pepper
  • 500 ml salmon fillet , skin removed
  • 375 g macaroni
  • 30 ml butter
  • 30 ml flour , all-purpose
  • 2 ml dry mustard
  • 2 ml onion powder
  • 2 ml garlic powder
  • 750 ml milk
  • 750 ml cheddar (Sensations by Compliments Triple Cheddar Shredded Cheese Blend - one 320 g bag)
  • 45 ml breadcrumbs
  • 500 ml cauliflower florets
  • 30 ml olive oil

  1. Preheat oven to 220°C (425°F).
  2. In a bowl, combine cauliflower with 15 mL (1 tbsp.) of olive oil. Add salt and pepper.
  3. Place cauliflower and salmon on a baking sheet lined with parchment paper. Brush salmon with remaining olive oil. Add salt and pepper.
  4. Bake for 15 minutes or until salmon is cooked and cauliflower is tender. Break up salmon into pieces using a fork. Set aside.
  5. Cook pasta al dente according to package directions. Drain and set aside.
  6. Place rack in middle of oven. Set oven to broil.
  7. In the same saucepan, melt butter. Sprinkle with flour and spices. Combine and cook for 2 minutes. Slowly whisk in milk. Bring to a boil, stirring constantly. Cook over low heat for 5 minutes or until sauce thickens, stirring constantly. Add cheese. Stir until cheese is melted. Add macaroni, salmon, and cauliflower. Add salt and pepper to taste.
  8. Transfer mixture to a baking dish that holds about 2 litres (8 cups). Sprinkle with breadcrumbs. Bake for about 3 minutes or until breadcrumbs are light golden brown.
