  • 450 g penne rigate
  • 15 ml canola oil
  • 2 clove(s) garlic , finely chopped
  • 2 yellow onion(s) , finely chopped
  • 500 ml mushrooms , sliced (about one container of 227 g)
  • 750 ml broccoli fleurets
  • 375 ml chicken , cooked and cut into chunks or pulled
  • 80 ml pesto
  • 15 ml lemon zest (about 1 lemon)
  • 500 ml cheddar , grated
  • To taste, salt and pepper
  • 60 ml parmesan , grated

  1. Preheat oven to 190°C (375°F). Cook pasta according to package directions.
  2. In a medium saucepan, heat oil and sauté garlic, onions, and mushrooms for 3 minutes. Add broccoli and continue to cook for another 3 minutes.
  3. In a large bowl, combine cooked pasta, sautéed vegetables, chicken, pesto, lemon zest and half of the Cheddar cheese. Season to taste.
  4. Transfer mixture to an ovenproof dish and top with Parmesan and remaining cheddar. Bake for about 12 minutes, or until cheese is melted and slightly brown.

Chef’s secret
To cook chicken thighs, preheat oven to 190°C (375°F). Place them on a parchment-lined
baking sheet and bake for about 20 to 30 minutes, or until a meat thermometer inserted
in the thickest part of a thigh reads 77°C (170°F). Pull away meat and use in your favourite
recipes.
