  • 15 ml canola oil
  • 1 onion(s) (large), coarsely chopped
  • 3 leeks (white part only), cut lengthwise and coarsely chopped
  • 500 ml potato(es) , cubed
  • 1,25 L chicken broth
  • 250 ml cooking cream (15% M.F.)
  • To taste, chives , fresh and cut in chunks
  • To taste, salt and pepper , grounded
  • 15 ml canola oil

  • 500 ml potato(es) , cubed
  • 1,25 L chicken broth
  • 250 ml cooking cream (15% M.F.)
  • To taste, chives , fresh and cut in chunks
  • To taste, salt and pepper , grounded

  1. Heat oil in a saucepan over medium-high heat, add onion and cook for 2 minutes.
  2. Add trimmed leeks and potatoes and cook for 3 minutes, stirring occasionally. Pour in chicken broth and bring to a boil, then reduce heat to low; cover and cook for 30 minutes.
  3. Pour soup into a blender and blend until smooth and creamy.
  4. Transfer soup to a saucepan, add cream and salt if desired and mix well while heating.
  5. Sprinkle with fresh chives and pepper right before serving.

Chef’s secret

Substitute 250 mL (1 cup) cubed celery root for leeks.
