  • 250 ml asparagus , trimmed and cut into 1 cm (½ in.) sections, about 8 spears

  • 125 ml milk
  • 250 ml suiss cheese , grated
  • 125 ml sweet red pepper(s) , diced (about ½ pepper)
  • 2 ml salt
  • To taste, pepper
  • 1 pie shell , deep (23 cm (9 in.))
  • 250 ml ham , cooked and diced
  • 1 tomatoes , sliced
  • 30 ml basil , fresh and chopped
  • 250 ml asparagus , trimmed and cut into 1 cm (½ in.) sections, about 8 spears

prep time
  1. Place grill in the bottom of the oven. Preheat oven to 190°C (375°F).
  2. Blanch asparagus in a pot of boiling water for 4 minutes. Immerse in cold water and drain.
  3. In a bowl, mix eggs and milk together. Add cheese, red bell pepper, salt, and pepper and mix to combine.
  4. Put ham and asparagus in pie shell. Cover with egg mixture. Garnish with tomato slices.
  5. Bake for about 50 minutes. Garnish with fresh basil. Let stand for 10 minutes before serving.

Chef’s tip

No fresh basil on hand? Replace it with 5 mL (1 tsp.) dried basil and add it to the egg mixture.
