      • 12 cucumbers (field), peeled and seeded
      • 8 yellow onions (large)
      • 3 sweet red pepper(s) , seeded
      • 1 bunch celery
      • 125 ml salt , coarse (1/2 cup)
      • 1 L sugar (4 cups)
      • 1 L white vinegar (4 cups)
      • 45 ml celeryseeds (3 tbsp.)
      • 45 ml mustard seeds (3 tbsp.)
      • 10 ml tumeric (2 tsp.)
      • 15 ml cornstarch (1 tbsp.)
      • 12 cucumbers (field), peeled and seeded
      • 8 yellow onions (large)
      • 3 sweet red pepper(s) , seeded
      • 1 bunch celery
      • 125 ml salt , coarse (1/2 cup)
      • 1 L sugar (4 cups)
      • 1 L white vinegar (4 cups)
      • 45 ml celeryseeds (3 tbsp.)
      • 45 ml mustard seeds (3 tbsp.)
      • 10 ml tumeric (2 tsp.)
      • 15 ml cornstarch (1 tbsp.)
      prep time
      1. Chop all vegetables in food processor. Transfer to a large bowl, cover with coarse salt, and let sit at room temperature for 12 hours, covered with plastic wrap.
      2. Rinse the vegetable mixture and drain well.
      3. In a large saucepan, combine sugar, vinegar, celery seed, mustard seed, and turmeric. Bring to a boil, add vegetables, and boil for 15 minutes, stirring from time to time.
      4. When relish is cooked, add cornstarch diluted in a little cold water, and stir well.
      5. Place relish in sterilized Mason jars.
