  • 10 ml olive oil
  • 2 stalk(s) celery , diced
  • 1 acorn squash , peeled and finely diced
  • 796 ml diced tomatoes
  • 750 ml vegetable broth
  • 250 ml soup pasta
  • 500 ml cooked chicken , diced
  • 142 g baby spinach
  • To taste, salt and pepper
  • 60 ml basil minced fresh, as garnish
  • 30 ml parmesan grated, as garnish
  • 10 ml olive oil
  • 2 stalk(s) celery , diced
  • 1 acorn squash , peeled and finely diced

  • 750 ml vegetable broth
  • 250 ml soup pasta
  • 500 ml cooked chicken , diced
  • 142 g baby spinach

prep time
  1. Heat oil in a large saucepan over high heat. Add the celery, squash, and onion. Fry until vegetables are slightly softened, about 5 minutes.
  2. Stir in the tomatoes, broth, and 750 mL (3 cups) of water. Bring to a boil. Add pasta and cook until al dente, about 5 minutes.
  3. Add the cooked chicken, spinach, and beans. Cook just until spinach is wilted and bean are hot, about 5 minutes. Season with salt and pepper to taste. Serve in bowls garnished with basil and sprinkled with Parmesan.
