Crêpes
  1. In a bowl, blend together flour, sugar, baking powder, and salt.
  2. In another bowl, combine the egg, milk, oil, and vanilla.
  3. Add wet ingredients to dry ingredients. Mix until batter is smooth.
  4. Heat a lightly oiled, non-stick skillet over mediumhigh heat. Pour about 80 mL (1/3 cup) of crêpe batter into centre of the skillet. Swirl the batter in the pan to create a uniform circle. Cook about 2 minutes per side, turning the crêpe over when bubbles break the batter’s surface and the cooked side is golden brown. Transfer to a plate and keep warm. Repeat to make 8 crêpes.
Turkey filling (4 crêpes)
  1. Fill crêpes one by one, fold them over and cook in skillet until cheese has melted.
Ham filling (4 crêpes)
  1. Fill crêpes one by one, fold them over and cook in skillet until cheese has melted.
  1. Serve one of each type of crêpe per person. Accompany with a green salad.

Chef’s tip:

For a whole wheat version, replace half the white flour with whole

wheat flour.
