  • 80 ml cheddar , grated
  • 30 ml canola oil
  • 3-4 shallot(s) , finely chopped
  • 60 ml chives , fresh and finely chopped
  • 45 ml parsley , fresh and chopped
  • 5 ml of thyme , dried
  • To taste, salt and pepper
  • 5 potato(es)
  • 80 ml cheddar , grated
  • 30 ml canola oil
  • 3-4 shallot(s) , finely chopped
  • 60 ml chives , fresh and finely chopped
  • 45 ml parsley , fresh and chopped
  • 5 ml of thyme , dried
  • To taste, salt and pepper
prep time
  1. Boil potatoes in a saucepan until cooked, but still slightly firm. Drain, let cool in a large bowl, and grate.
  2. Gently combine grated cheese and potatoes.
  3. Heat oil in a large, heavy-bottom skillet. Put potato mixture into skillet in a single layer. Garnish with shallots and herbs. Season to taste.
  4. Cook over medium heat, pressing down on potatoes with a spatula. When bottom is brown, divide into four pieces and gently turn over with spatula.
  5. Cook until other side is golden brown and slightly crisp. Serve hot.
