Ingredients
- 2 cups
- water
- 500 ml
- 1 cup
- fresh or frozen strawberries, trimmed and sliced
- 250 ml
- 1 cup
- fresh or frozen rhubarb, sliced
- 250 ml
- 1 cup
- sugar
- 250 ml
- Zest and juice of 2 lemons
- 1 tsp.
- vanilla essence (optional)
- 5 ml
Preparation
- Step 1
- In a saucepan, bring all the ingredients to a boil, except the vanilla essence. Reduce heat and simmer for about five minutes, or until the sugar has dissolved. Let cool.
- Step 2
- Puree the mixture in a food processor. Stir in the vanilla and mix with a spoon. Pour the mixture into a Pyrex dish large enough to have a thickness of liquid of about two inches. Place in the freezer for 24 hours. When the mixture is iced, scrape with a fork.
- Step 3
- Divide into glasses and serve.
Variation
For an alcoholic version, add a dash of vodka to each glass when serving.
