Ingredients

3 tbsp
butter
3 tbsp
unbleached all-purpose flour
2 cups
milk
(500 ml)
1 cup
Gruyère, Emmental or Swiss cheese, grated

¼ tsp
ground nutmeg
4 cups
broccoli, cut into small florets
(280 g)
3 cups
cooked turkey, diced

Preparation

Step 1
With the rack in the middle position, preheat the oven to 350°F (180°C).
Step 2
In a pot over medium heat, melt the butter. Add the flour and cook for 1 minute while whisking. Whisk in the milk. Bring to a boil while whisking. Continue to cook for 2 minutes or until the sauce thickens. Remove from the heat.
Step 3
Add the cheese and nutmeg to the pot. Season with salt and pepper. Stir until the cheese has melted. Keep warm.
Step 4
In a pot of salted boiling water, cook the broccoli for 2 minutes or until al dente. Drain.
Step 5
In an 8-cup (2 litre) baking dish, spread out the broccoli and turkey meat. Cover with the cheese sauce. Sprinkle with the crumbled crackers.
Step 6
Bake for 30 minutes or until the surface is golden. Finish off cooking under the broiler for a few minutes, if desired. Let sit for 10 minutes before serving.
