      • 24 Pacific white shrimp cooked, peeled, tail off, 71-90 count, thawed
      • 6 slices of Fritz Raclette cheese
      • 48 capers
      • 3 green onion(s) finely sliced on the diagonal
      • To taste freshly ground pepper,
      • To taste sour cream

      prep time
      1. grill 4 shrimp on the raclette grill.
      2. place the following ingredients in a raclette pan in this order: 1 slice of cheese, grilled shrimp, 8 capers, and 5 mL (1 teaspoon) of green onion.
      3. place the pan under the grill for about 5 minutes, or until cheese is melted.
      4. before eating, season with freshly ground pepper and top with sour cream, to taste.
