  • 250 ml potato(es) , peeled and cubed (about 1 potato)
  • 45 ml butter
  • 1 onion(s) , chopped
  • 2 carrot(s) , diced
  • 1 stalk(s) celery , diced
  • To taste, salt and pepper
  • 45 ml flour all purpose
  • 250 ml milk
  • 454 g salmon fillet , skinless , cut into cubes
  • 125 ml frozen green peas
  • 2 ball(s) of pie dough
  • To taste, milk for milk wash
  • 250 ml potato(es) , peeled and cubed (about 1 potato)
  • 45 ml butter
  • 1 onion(s) , chopped
  • 2 carrot(s) , diced
  • 1 stalk(s) celery , diced
  • To taste, salt and pepper
  • 45 ml flour all purpose
  • 250 ml milk
  • 454 g salmon fillet , skinless , cut into cubes
  • 125 ml frozen green peas
  • 2 ball(s) of pie dough
  • To taste, milk for milk wash
prep time
  1. Cook potatoes in a pot of salted water until tender. Drain and set aside.
  2. Fry onion in butter in a skillet until tender. Add carrots and celery and continue cooking 3 more minutes. Season with salt and pepper. Sprinkle with flour and continue cooking for 1 minute, stirring. Add milk and bring to boil while stirring.
  3. Add salmon and bring to boil. Let simmer about 2 minutes, stirring, to break up salmon. Add peas and potatoes. Adjust seasoning. Remove from heat. Set aside.
  4. Place the rack in the bottom of the oven. Preheat the oven to 200°C (400°F).
  5. On a floured work surface, roll out the two balls of dough and line a 23-cm (9-in.) pie pan one of the rolled out pieces. Cut slits in the second piece of rolled out dough. Transfer the salmon filling into the pie shell.
  6. Brush the edges of dough with milk and cover with second piece of dough. Pinch dough together all around the edge and brush with milk.
  7. Bake for 45 minutes or until the pastry is golden brown. Let sit for 15 minutes and then serve.

Short on time? Buy commercial pie dough that's already rolled out. Just place it in the pie pan.
