  • 2 kg baby back ribs , cut into 2-rib pieces (2 racks)
  • 30 ml olive oil
  • 2 clove(s) garlic , minced
  • 15 ml rosemary (fresh and chopped)
  • 5 ml salt
  • 2 ml pepper (ground pepper)
  • 2 apple(s) (red), unpeeled, cored, and cut into wedges
  • 1 red onion(s) , thinly sliced
  • 125 ml barbecue sauce (store-bought)
  • 2 kg baby back ribs , cut into 2-rib pieces (2 racks)
  • 30 ml olive oil

  • 15 ml rosemary (fresh and chopped)
  • 5 ml salt
  • 2 ml pepper (ground pepper)
  • 2 apple(s) (red), unpeeled, cored, and cut into wedges
  • 1 red onion(s) , thinly sliced
  • 125 ml barbecue sauce (store-bought)

  1. Preheat grill to medium.
  2. Toss ribs with olive oil, garlic, rosemary, salt, and pepper.
  3. Make 2 foil packs using double sheets of heavy-duty foil for each pack (sheets need to be large enough to wrap around ribs, apples, and onions).
  4. In the centre of each sheet, place half the sliced apples and onions and cover with half the ribs.
  5. Double-fold sides and tops of foil edges to seal packs, leaving room for heat to circulate inside.
  6. Place packs on grill and cook for 50 to 60 minutes, or until ribs are tender.
  7. Remove ribs from foil packs and set aside apple mixture.
  8. Return ribs directly to the grill and cook for another 10 minutes, turning and basting with barbecue sauce.
  9. In a food processor, purée apple mixture until almost smooth.
  10. Serve mixture as a dipping sauce for ribs.
