Preparation

Step 1
Preheat grill to medium.
Step 2
Toss ribs with olive oil, garlic, rosemary, salt, and pepper.
Step 3
Make 2 foil packs using double sheets of heavy-duty foil for each pack (sheets need to be large enough to wrap around ribs, apples, and onions).
Step 4
In the centre of each sheet, place half the sliced apples and onions and cover with half the ribs.
Step 5
Double-fold sides and tops of foil edges to seal packs, leaving room for heat to circulate inside.
Step 6
Place packs on grill and cook for 50 to 60 minutes, or until ribs are tender.
Step 7
Remove ribs from foil packs and set aside apple mixture.
Step 8
Return ribs directly to the grill and cook for another 10 minutes, turning and basting with barbecue sauce.
Step 9
In a food processor, purée apple mixture until almost smooth.
Step 10
Serve mixture as a dipping sauce for ribs.
