Preparation

Step 1
Preheat oven to 200°C (400°F).
Step 2
In a large bowl, combine bell peppers, onions, garlic, and oil. Add salt and pepper. Line a baking sheet with parchment paper and spread mixture. Bake 30 minutes, stirring every 10 to 15 minutes, until peppers are roasted. Transfer mixture to a dish and refrigerate uncovered to cool. Add tomatoes.
Step 3
In a medium-sized bowl, mix sour cream and mayonnaise. Spread mixture in the bottom of a 2L (8 cup) serving dish. Add pepper mixture in an even layer over top and garnish with grated cheese and green onions. Serve with corn chips.
