  • 250 ml couscous
  • 1 bunch(es) asparagus , woody ends removed
  • 60 ml olive oil
  • 30 ml red wine vinegar
  • 1 ml salt
  • 1 ml pepper
  • 250 ml Mini Sweet Tomatoes (Compliments Candi-to™) halved
  • 60 ml basil (fresh Compliments), chopped
  • 125 ml feta , crumbled
  • 250 ml couscous
  • 1 bunch(es) asparagus , woody ends removed
  • 60 ml olive oil
  • 30 ml red wine vinegar
  • 1 ml salt
  • 1 ml pepper
  • 250 ml Mini Sweet Tomatoes (Compliments Candi-to™) halved
  • 60 ml basil (fresh Compliments), chopped
  • 125 ml feta , crumbled
prep time
  1. Prepare couscous according to package directions.
  2. Meanwhile, blanch asparagus in boiling water for about 1 minute. Drain and transfer to an ice water bath to stop it from cooking. When cooled, drain again, cut into pieces, and set aside.
  3. Whisk together the oil, vinegar, salt, and pepper in a large bowl.
  4. Mix in the cooked, cooled couscous, tomatoes, basil, and reserved asparagus.
  5. Transfer to a serving bowl and sprinkle with crumbled feta cheese.
