  • 60 ml butter , softened
  • 60 ml flour , all purpose
  • 30 ml olive oil
  • 2 lobster shells, cooked, cracked
  • 1 onion(s) , peeled and diced
  • 2 stalk(s) celery , cut in chunks
  • 125 ml carrot(s) , diced
  • 250 ml white wine
  • 1 clove(s) garlic , chopped
  • 30 ml tomato paste
  • 125 ml diced tomatoes , canned
  • 1 bay leaf(-ves)
  • 2 L vegetable broth
  • 60 ml cooking cream 35% M.F.
  • 1 pinch cayenne pepper (optionnal)
  • To taste, sprig(s) dill (optionnal)
  • To taste, salt and pepper

prep time
  1. In a small bowl, blend together the butter and flour, forming a paste. Set aside.
  2. In a large saucepan over medium heat, heat olive oil and sear lobster shell pieces for 3 to 4 minutes until they become more red.
  3. Add the onion, celery, carrot, and cook 5 or 6 minutes. Deglaze saucepan with white wine and reduce.
  4. Add the garlic, tomato paste, canned tomatoes, bay leaf, and vegetable broth. Bring to a boil; reduce heat to low and simmer for 30 minutes.
  5. Strain bisque through a fine sieve.
  6. Add butter paste to bisque and stir until it thickens.
  7. Add the cream and cayenne pepper. Stir and adjust seasoning as needed.
