  • 175 ml pecan pieces, toasted, finely chopped
  • 80 ml cranberries , dried, finely chopped
  • 125 ml flour
  • 4 chicken breasts
  • 2 egg(s) , beaten
  • Creamy pepper sauce
  • 15 ml butter
  • 15 ml flour
  • 250 ml milk
  • 60 ml Boursin pepper cheese
  • 30 ml chives , fresh, finely chopped
  • To taste, salt

Pecan-cranberry chicken breasts
  1. Preheat oven to 190°C (375°F).
  2. Mix together pecans and cranberries on a plate.
  3. Dip chicken breasts in flour and shake to remove excess.
  4. Dip breasts in beaten eggs and then coat well with pecan-cranberry mixture.
  5. Place breasts in a greased, oven-safe dish. Bake for 20 to 25 minutes or until chicken is golden outside and no longer pink inside.
Creamy pepper sauce
  1. In the meantime, melt butter in a small saucepan over medium heat. Add flour and stir continuously for 1 minute.
  2. Whisk in the milk and cook until sauce thickens and begins to boil.
  3. Add the cheese and stir until completely melted.
  4. Sprinkle with fresh chives and season with salt to taste.
  5. Serve chicken breasts with pepper sauce.

Variation: Replace pecans with pine nuts and the cranberries

with dried tomatoes.
