  • Salsa
  • 2 tomatoes
  • 1 orange
  • 10 ml ginger , fresh, chopped
  • 30 ml onion(s) , chopped
  • 10 ml lime juice , fresh
  • 30 ml coriander
  • 1 ml coriander seeds
  • 2 ml sugar
  • 30 ml Thai sauce
  • 1 ml salt
  • Salmon
  • 4 salmon fillet , skinless (175 g each)
  • To taste, salt and pepper
  • 30 ml vegetable oil
  • To taste, coriander leaves
  • Salsa
  • 2 tomatoes
  • 1 orange
  • 10 ml ginger , fresh, chopped
  • 30 ml onion(s) , chopped
  • 10 ml lime juice , fresh
  • 30 ml coriander
  • 1 ml coriander seeds
  • 2 ml sugar
  • 30 ml Thai sauce
  • 1 ml salt
  • Salmon
  • 4 salmon fillet , skinless (175 g each)
  • To taste, salt and pepper

  • To taste, coriander leaves
prep time
  1. Preheat oven to 230°C (450°F).
Salsa
  1. Dice tomatoes and place in a strainer to drain off any excess juice.
  2. Peel orange and dice. Add to tomatoes.
  3. In a medium-size bowl, combine remaining salsa ingredients.
  4. Add tomato and orange mixture and combine. Set aside.
Salmon
  1. Season both sides of salmon with salt and pepper. Heat oil in an ovenproof skillet.
  2. Place salmon in skillet and fry over medium heat until golden brown. Turn and cook for another minute.
  3. Place skillet with salmon in oven to cook until fish flakes easily with a fork, about 2 minutes.
  4. Please the pieces of salmon on a warm plate, top with salsa, and garnish with cilantro. Serve with Oriental noodles.
