Step 1
In a small saucepan, cook the rice according to the package instructions. Set aside.
  • Tip: If you have extra broth, you can use it for cooking the rice.
  • Tip: Take advantage of this waiting time to cut, measure the recipe ingredients, and move on to step 2.
Step 2
In a large pot, heat the oil and sauté the onion, garlic, and sweet potato for 10 minutes, stirring occasionally.
Step 3
Add salt and stir in the curry powder, tomato soup, chicken broth, lentils, and apples.
Step 4
Bring to a boil, reduce the heat, and let simmer for 15 minutes.
  • Tip: You can adjust the texture to your liking by adding a little water.

Step 5
Serve the lentil curry over the rice.
