  • 15 ml olive oil
  • 1 onion(s) , chopped
  • 2 clove(s) garlic , chopped
  • 142 g spinach
  • 60 ml mayonnaise
  • To taste, salt and pepper
  • 4 slice(s) swiss cheese
  • 4 chicken breast halves , boneless and skinless
  • 8 slice(s) bacon
  • 15 ml olive oil
  • 1 onion(s) , chopped
  • 2 clove(s) garlic , chopped
  • 142 g spinach
  • 60 ml mayonnaise
  • To taste, salt and pepper
  • 4 slice(s) swiss cheese
  • 4 chicken breast halves , boneless and skinless
  • 8 slice(s) bacon
prep time
  1. Heat oil in a skillet over medium heat. Sauté onion for 5 minutes. Add the garlic and spinach. Fry a few minutes or until spinach is wilted. Let cool.
  2. Preheat barbecue to medium-high.
  3. Mix together the cooled spinach and mayonnaise in a bowl. Season with salt and pepper.
  4. Slice chicken breasts widthwise almost all the way through, so they open like a book. Season with salt and pepper. Stuff each breast with a slice of Swiss cheese. Top with the spinach mixture. Close breasts and wrap with bacon (2 slices per breast).
  5. Cook on the barbecue for about 20 minutes, or until internal temperature reaches 77°C (171°F).
  6. Serve with grilled vegetables.
