      • 1/2 lettuce (head of red and green leaf lettuce)
      • 4 chicken breasts , boneless, skinless
      • 1/2 cantaloupe
      • 500 ml strawberris (2 cups)
      • 250 ml blueberries (1 cup)
      • Dressing
      • 250 ml raspbrries , fresh (1 cup)
      • 125 ml olive oil (1/2 cup)
      • 50 ml orange juice (1/4 cup)
      • 15 ml fresh mint (1 tbsp.)
      • 1 lemon , zest only
      • 1 orange , zest only
      • To taste, pepper

      • 1/2 lettuce (head of red and green leaf lettuce)
      • 4 chicken breasts , boneless, skinless
      • 1/2 cantaloupe

      1. Blend all dressing ingredients in a food processor. Refrigerate until serving.
      2. Shred lettuce and place on four large plates in equal portions.
      3. Add equal portions of chicken breast strips, cantaloupe, strawberries and blueberries.
      4. Drizzle with dressing and serve immediately.
