Preparation
- Step 1
- Blend all dressing ingredients in a food processor. Refrigerate until serving.
- Step 2
- Shred lettuce and place on four large plates in equal portions.
- Step 3
- Add equal portions of chicken breast strips, cantaloupe, strawberries and blueberries.
- Step 4
- Drizzle with dressing and serve immediately.
