  • 30 ml olive oil
  • 15 ml red wine vinegar
  • 5 ml garlic , finely chopped
  • 15 Kalamata olives , pitted, halved
  • 30 ml oregano fresh and finely chopped
  • To taste, pepper , grounded

  • 3 tomatoes (medium red), diced
  • 1 sweet red pepper(s) , seeded and diced
  • 1 English cucumber cut into half circles
  • 1/2 red onion(s) , thinly sliced
  • 80 ml feta , crumbled

  • 30 ml olive oil
  • 15 ml red wine vinegar

  1. Whisk together oil, vinegar, garlic, olives, oregano, and pepper (to taste) in a large bowl. Let stand 10 minutes to allow flavours time to develop.
  2. Add in tomatoes, bell pepper, cucumber, onion, and feta cheese to taste. Toss well and serve as a side dish.
