Ingredients

Papillotes
1 ½ lb
baby potatoes, cut in half
675 g

red onion, sliced
2
garlic cloves, minced
¼ lb
bacon, diced
125 g
3 tbsp
olive oil
45 ml

sprigs of fresh thyme, leaves stripped
Salt and pepper, to taste
Toppings
1/2 cup
sour cream
125 ml
3 tbsp
fresh chives, chopped
45 ml

Preparation

Step 1
For the papillotes, preheat the BBQ to high heat.
Step 2
Divide the ingredients onto four sheets of aluminum foil and drizzle with olive oil. Season with salt and pepper and garnish with thyme then close the papillotes.
Step 3
Lower heat to medium and place the papillotes on the grill. Close the BBQ lid and cook for about 35 minutes, or until the potatoes are tender and the bacon crispy.
Step 4
Remove the papillotes from the grill and open them. Top with sour cream and chives.
