      • 80 mL (1/3 cup) olive oil
      • 60 mL (1/4 cup) freshly squeezed lemon juice (about 1 lemon)
      • 60 mL (1/4 cup) chopped fresh parsley
      • 30 mL (2 tbsp.) chopped fresh oregano or
      • mL (1/2 tsp.) dried oregano
      • 5 mL (1 tsp.) salt
      • 2 mL (1/2 tsp.) ground pepper
      • 4 chicken thighs
      • 4 drumsticks
      • 80 mL (1/3 cup) olive oil
      • 60 mL (1/4 cup) freshly squeezed lemon juice (about 1 lemon)
      • 60 mL (1/4 cup) chopped fresh parsley
      • 30 mL (2 tbsp.) chopped fresh oregano or
      • mL (1/2 tsp.) dried oregano
      • 5 mL (1 tsp.) salt
      • 2 mL (1/2 tsp.) ground pepper

      1. In a large bowl, whisk together olive oil, lemon juice, parsley, oregano, salt, and pepper. Set half of the sauce aside in a small bowl. Add chicken to remaining sauce and coat well.
      2. Preheat barbecue to medium-high. Grill chicken for 25 minutes or until a meat thermometer reads 77°C (170°F) when inserted in the thickest part or juice is clear, turning often.
      3. Place chicken on a cutting board or tray. Pour remaining lemon herb sauce over chicken to serve.
